A Healthy Recipe from Gini: Grilled Halibut with Roasted Yellow Peppers
Grilled Halibut with Roasted Yellow Peppers

8oz. Fresh Halibut fillet per person
1 Large Yellow Bell Pepper
1/2 Cup Olive Oil
1/2 Cup Sweet Basil Leaves rough chopped (save a few for garnish!)
Sea Salt and Cracked Pepper to taste
2 Garlic Cloves rough chopped
2 Tablespoons Butter
Heat outdoor or indoor grill to medium high heat for about 10 minutes.
Roast yellow pepper until the skin is completely charred. Run under cold water and gently remove the charred skin. Cut into 1/2" wide slivers and set aside.
Blend together sweet basil, garlic and olive oil with processor, blender or hand blender in a small bowl, with consistency similar to pesto. Add salt and pepper to taste and set aside.
Brush just enough oil on the halibut fillets to lightly coat. Sprinkle a small amount of salt and pepper on top and bottom of the halibut. Place fillets on hot grill until lightly browned or to preferred "doneness."
Arrange the roasted yellow pepper in a straight pattern on a serving plate. Place halibut on top of the peppers on the serving plate and add a 1/2 strip of basil oil across the top of the fillet. Microwave for 1 minute. Garnish with basil leaves and serve!
